Did find an answer to your problem? This happened exactly to me on my Acer C731 Relm Chromebook, it uses also an eMMC... I got the "root account is locked" message too.

Here is what I tried,

A. Chroot and mkinitcpio
B. Chroot and reinstall GRUB
C. Regeneration of fstab
D. Saving the /dev/mmcblk instead of the UUID
E. Boot from the GRUB shell
F. Formating again the UEFI partition
G. Reinstall Arch by hand
H. Using archinstall
I. I also did try rEFInd

Nothing worked! So I suppose now is the Kernel, unfortunately I deleted my Arch instalation but here's what worked for me: I installed Manjaro and found that Kernel 6.18.12 works, I am pretty sure that the problem could be the eMMC and the latest Arch Linux Kernel (maybe the driver?). So, if you have not deleted your cache maybe you can chroot and reinstall the kernel you were using before the update? (pacman - U)

P. S. If I update Manjaro I won't be able to boot again.
